Italian-Style Pasta Salad
Ingredients: spiral noodles, cooked; Italian salad dressing; 1 green pepper; 1 tomato; 1 cucumber; green onion; deli ham/salami – Boil the noodles until cooked but not mushy. Drain. Cut up vegetables into bite-sized pieces. Cool the noodles in a colander by running cold water over them. Mix vegetables and noodles together with dressing, to taste. Arrange the ham and/or salami as a garnish on the bowls of salad.
Bacon and Mushroom Rice
Ingredients: 3 slices of bacon; 1 green onion; 1 can of sliced mushrooms, drained OR 1 cup fresh mushrooms, sliced; 1 cup water; 1 cup instant rice; 2 bouillon cubes, chicken or beef flavour – Set water and bouillon cubes on to boil. Once boiled, add rice, stir, cover pot and remove from heat. Take 3 slices of bacon, cut them up and fry until crisp. Add cut up green onion and the mushrooms and sauté two minutes. Drain off the excess bacon fat and add mixture to the rice. Season with salt and pepper to taste.
Home-Made Macaroni and Cheese
Ingredients: 4 cups macaroni noodles; 1 cup cheddar cheese and 1 cup mozzarella cheese; 1/4 cup milk; 2 tbsp margarine; 2 tbsp flour; squirt of mustard; 1 clove garlic, minced – Prepare noodles as per package instructions. Drain off water. Stir in milk, margarine and mustard. Add cheese, garlic and flour and mix thoroughly. Serve immediately with freshly ground pepper to taste.
Cheesy Hashbrown Casserole
Ingredients: 2 kg of frozen hashbrowns (thawed out); 1 – 500 ml container of sour cream; 2 cans of mushroom soup; 1/2 cup margarine, melted; 4 green onions, chopped; 2 cups of shredded cheddar cheese – Except the cheese, mix all the above ingredients together in a large bowl until well mixed. Turn into a greased 9 x 13 baking dish, cover with tin foil and bake at 350C for 1 1/2 hours. Remove from oven, uncover and add cheese to top of hashbrowns and bake another five minutes or until cheese is melted. Remove from oven and let stand five minutes before serving.
Second Time Baked Potatoes
Ingredients: 4 potatoes, baked; 4 tbsp butter; 1/4 cup milk; 3 green onions, chopped; 3 slices of cooked bacon, cut up; grated cheddar cheese – Cut baked potatoes in half lengthwise. Carefully spoon out middle of potato keeping skin intact like a “bowl”. Place scoops of the inside of the potato into a bowl and mash thoroughly. Add butter, milk, green onions and bacon and a sprinkling of cheese. Using an electric mixer, mix thoroughly until potato mixture is fluffy. Carefully spoon into potato skin bowls (they will be over-full). Sprinkle grated cheese on top of potato mixture and bake at 350C for 40 minutes.
Barbequed Veggies in Foil
Ingredients: 1/2 zucchini sliced lengthwise into 1/2 inch thick strips; 3 carrots cut in half and then in half lengthwise; 1/2 large onion, sliced; 2 cloves garlic; 2 tsp butter; seasoning salt – Place vegetables and garlic in the centre of a large piece of foil. Place butter on top and sprinkle vegetables with seasoning salt. Add one tsp water to vegetables. Fold foil into a packet enclosing vegetables tightly by folding edges together. Use a sharp knife to cut a small hole in top of foil to let steam escape. Place on medium heat on barbeque for twenty minutes. Pour into serving bowl. Stir and serve.
Ingredients: 4 carrots, sliced downward at an angle; 1 tbsp margarine; 2 tbsp brown sugar – Cook sliced carrots in a little water until they are tender. Drain off water. Mix margarine and brown sugar in a bowl and melt together in microwave for approximately 30 seconds. Stir well and pour over carrots in a serving bowl and stir to coat all the carrots. Garnish with oregano and serve.
Sweet Potato Parmesan Fries
Ingredients: 2 sweet potatoes, peeled; 2 tbsp olive oil; parmesan cheese; seasoning salt – Cut sweet potatoes lengthwise into fries. Place in bowl and sprinkle with olive oil. Toss until potatoes are coated with oil. Pour onto greased baking sheet and spread out over baking pan. Sprinkle Parmesan cheese over fries and then sprinkle seasoning salt. Bake in 400C oven for 30 minutes or until tender, turning once halfway through bake time, sprinkling at that time again with parmesan cheese.
Cheesy Garlic Bread
Ingredients: loaf of French bread; butter; 2 cloves garlic, minced; 1 green onion; cheddar cheese – Cut French bread lengthwise into two halves. Liberally spread butter on each cut side. Spread minced garlic over butter. Sprinkle with green onion and cheddar cheese. Bake on baking sheet for 20 minutes or until cheese is melted and bubbly. Cut into slices and serve immediately.
Mushroom Sauce (for mushroom burgers, or to pour over steak or pork chops)
Ingredients: 1 can mushroom soup; 1 can sliced mushrooms, drained (or one cup sliced fresh mushrooms); 1/2 onion, sliced (if desired); 1 clove garlic, minced; 1/4 cup milk; 1 cube beef flavoured bouillon – Brown mushrooms and onions (if desired) in a frying pan with a tsp of margarine. Mix all the above ingredients into a sauce pan. Whisk constantly while heating on low heat until heated through. Keep warm until ready to use stirring often so a skin does not form on top. Pour over meat.
